A song by the sea: within the Sydney Opera House, sitting adjacent of the Harbour Bridge. Beautiful warm lighting, the dynamics of the beautiful wooden architecture and a night orchestrated with beautiful food. Bennelong is perhaps boastfully one of the best seats you will have for dinner in Sydney, and in the evening, it really is something more.

Omakase - a dining experience purely left to the chef's discretion. Roughly, it translates to "I'll leave it up to you." Entrusting that the chef will know best, and allow him or her to take you upon a food journey. This is perhaps my favourite type of dining experience - especially when seated at a limited bar in front of an itamae as they entertain you with the theatrics of the skill from years upon years of practice. A profession that does not come lightly, but from dedication and one's craftsmanship that can only be gained through experience.
