Omakase - a dining experience purely left to the chef's discretion. Roughly, it translates to "I'll leave it up to you." Entrusting that the chef will know best, and allow him or her to take you upon a food journey. This is perhaps my favourite type of dining experience - especially when seated at a limited bar in front of an
itamae as they entertain you with the theatrics of the skill from years upon years of practice. A profession that does not come lightly, but from dedication and one's craftsmanship that can only be gained through experience.
